Combine all of this with RHUBARB and you have yourself a super-mega healthy breakfast, snack or dessert!




Ingredients
1/3 cup chia seeds
2 cups Veggemo Milk
1 teaspoon vanilla extract Are Extracts Gluten-Free?
1/4 cup rhubarb jam
1 cup fresh rhubarb, finely chopped
Directions
In a medium bowl, combine the chia seeds, Veggemo milk and vanilla extract. Stir well, and let the chia seeds start to gel and absorb the liquid - about 15 minutes.
Stir in the chopped rhubarb.
Spoon the chia seed pudding into six 1/4 pint jars or containers.
Top with a tablespoon of rhubarb jam Cover and refrigerate 1-2 hours or overnight.
