Roasted Rainbow Carrots & Asparagus

Say hello to Spring with these beautiful roasted rainbow carrots and asparagus. Did you know that all carrots were originally purple? These lovelies contain a massive amount of nutrients and are superheros for the cardiovascular system!


4-5 each purple carrots, white carrots & orange carrots

1 large bundle of fresh asparagus

1/2 cup olive oil

salt & pepper to taste

1/4 cup sliced almonds

fresh minced dill

fresh minced parsley


  1. Wash, peel and halve the carrots.

  2. Drizzle a parchment lined baking sheet with a few tablespoons of olive oil.

  3. Arrange the vegetables on the baking sheet and drizzle with a the rest of the olive oil. Sprinkle with almonds, salt, pepper and spices. Bake at 375 F for 10-12 minutes.

  4. Serve immediately. This goes great with rice dishes!
