Pina Colada Chia Seed Pudding

2 cups light, unsweetened coconut milk

1/2 cup chia seeds

2 tablespoons maple syrup

1 cup fresh pineapple, minced

1/2 cup unsweetened coconut

More coconut and pineapple slices for garnish


  • In a large bowl, whisk together the coconut milk, chia seeds, maple syrup and coconut. Allow to rest for 15 minutes.

  • Allow to soak for 3-4 hours or overnight.

  • Top with more coconut and pineapple.
