Laurie's Mahi Mahi

I told you that I came from a family of amazing cooks, right? Well let me tell you that ever since my sister, Laurie, made this fish for Christmas dinner, I have been borderline obsessing about it. Mahi Mahi might be hard to come by this time of year, but GOOD LORD this is SO good, it's completely worth the scavenger hunt!







Ingredients:

4 tablespoons butter

2 teaspoons freshly squeezed lemon juice

2 large garlic cloves, finely chopped

2 cups diced fresh pineapple

Salt & pepper to taste

1/4 teaspoon cayenne pepper

2 tablespoons chopped fresh basil leaves

3 tablespoons avocado oil

4 (6 to 8-ounce) mahi mahi fillets

Directions

  1. Combine the butter, lemon juice, garlic, pineapple, salt, pepper, cayenne, and basil in a medium saucepan and cook over low heat, stirring until the butter melts. Cover and keep warm over low heat.

  2. Heat the oil in a large skillet over medium-high heat. Season the fish with salt and pepper, to taste. Cook the fish for 5-6 minutes; then turn and cook until just opaque, about 3 to 4 minutes more.

  3. Spoon the warm sauce over the fish and serve with basmati rice.
