Rhubarb, rhubarb! How I love thee! Such a strange and beautiful plant. So colorful, sweet, sour and dangerous all at the same time. There are millions of ways to cook you! Here is just one: (Expect more!) These chewy bars make the perfect potluck, picnic or tailgate treat!



Ingredients
1 cup Namaste Perfect Flour Blend flour
3/4 cups gluten-free quick-cooking oatmeal
1 cup sliced almonds
3/4 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, room temperature and soft but not melted
1 large egg
3/4 cup rhubarb jam
12 slices of rhubarb, for garnish, optional
Directions
Grease and line an 8" square baking pan with parchment paper. Preheat the oven to 350F.
In a large bowl, thoroughly combine the flour, oatmeal, almonds, brown sugar, baking powder and salt.
Using your hands, work the butter into the flour mixture until it is evenly distributed throughout. Mix in the egg the same way.
Press 1/2 of the mixture into the prepared baking pan. Top with the rhubarb jam and sprinkle the remaining dough on top of the jam. Flatten gently using moistened hands. Press slices of rhubarb into the top of the bars.
Bake for 30-35 minutes or until the top is golden brown. Cool completely before slicing.
