Gluten-Free Cutout Cookies

Show the love to your friends and family by treating them to these delicious gluten-free cutout cookies. Decorating them is half the fun!

Ingredients

1/2 cup butter

1/2 butter, melted

1 1/2 cups granulated sugar

4 egg yolks

2 tsp. pure vanilla extract Are Extracts Gluten-Free?

1/2 teaspoon almond extract

1 cup almond flour

1/2 cup brown rice flour

1/2 cup sorghum flour

1/4 cup potato flour

1/4 cup tapioca flour

1 1/2 teaspoons xanthan gum

1/2 teaspoon salt


Directions

  1. Cream butters and sugar until very fluffy. Beat in the egg yolks and extracts. 

  2. Sift together flours, xanthan gum and salt. Beat in the dry ingredients gradually into the sugar mixture, scraping the sides and bottom to make sure the flours are completely incorporated.

  3. Cover tightly with plastic wrap and refrigerate for at least an hour or overnight.

  4. Preheat oven to 350º F. Line cookie sheets with parchment paper.

  5. Lightly flour a pastry mat or your countertop, your rolling pin and cookie cutters with brown rice flour.  Roll the dough out to desired thickness and cut into shapes. 

  6. Bake approximately 7-9 minutes or until the edge are VERY lightly brown. Cool on wire rack. Decorate as desired!
