Gluten-Free Cran-Orange Chocolate Chip Cookies

1 cup butter, softened 1/2 cup white sugar 1/2 cup brown sugar 1 egg 1 Tablespoon orange zest (I used clementines) 2 1/2 cups sorghum flour

1 teaspoon xanthan gum 1 teaspoon baking soda 1/2 teaspoon salt 1 cup chopped walnuts 1 1/2 cups dried cranberries 1 1/2 cups chocolate chips


  1. Preheat oven to 350 degrees F.

  2. Beat butter and sugars until fluffy, add egg and orange zest.

  3. Sift together flour, xanthan gum, baking soda and salt.

  4. Fold in walnuts, cranberries and white chocolate chips.

  5. Drop by spoonful onto parchment lined cookie sheets and bake for 7-10 minutes or until golden brown along the edges.

  6. Cool on a wire rack.
