Gluten-Free Chocolate Brioche

Yes. You read that right. Chocolate Brioche.....that is Gluten-Free....and guess what else? You might want to sit down for this......It is also DAIRY FREE! So let me get this straight. This is a GLUTEN-FREE, DAIRY-FREE CHOCOLATE BRIOCHE!


I took advantage of the cooler days we have had in the past week to simultaneously bake this and fill my house with the smell of baking chocolate bread. I feel the neighbors eyes on me...




Ingredients

Directions

  1. Lightly grease and line a loaf pan with parchment paper.

  2. In a small bowl, combine the yeast and warm water with a pinch of sugar to proof. Set aside in a warm place while you prepare the rest of the dough.

  3. In a large bowl, beat together the vegan butter and sugar until fluffy.

  4. In another large bowl, whisk together the tapioca flour, sorghum flour, brown rice flour, garbanzo flour cocoa powder, baking powder, salt and xanthan gum. This is a very important step to make sure the xanthan gum is thoroughly distributed throughout the dough.

  5. Alternately beat the flour mixture and the beaten eggs into the butter/sugar mixture, ending with beating in the proofed yeast. Fold in the chocolate chips.

  6. Transfer dough into prepared loaf pan, cover with a towel and let rise in a warm place for 1 hour.

  7. Preheat oven to 350F.

  8. Brush the top of dough with beaten egg and sprinkle with sugar.

  9. Bake for 45 minutes to 1 hour or until internal temperature reaches 200F.

  10. Cool completely in pan before serving.
