Gluten-Free Broiled Salmon Patties

Ingredients:

2 cans pink Alaskan salmon, drained and mashed with a fork

1 medium zucchini, shredded

1 medium carrot, shredded

1 small onion, shredded

1 egg

3 Tablespoons mayonnaise

1/2 cup gluten-free bread crumbs

1 Tablespoon dried dill or 2 Tablespoons fresh minced dill

1/4 teaspoon cayenne pepper

Salt and pepper to taste


Directions:

Combined all ingredients and form into 3-4" patties. Place onto foil lined cookie sheet. Cook under high broiler on a middle rack about 15-17 minutes until it starts to form a crust. Flip over and broil a further 10-15 minutes. Flip one more time and broil another 5 minutes. Serve with your favorite sauce - I like horseradish sauce with this one. You can also make the patties slightly large to be eaten as burgers!
