Eat one of these blueberry oatmeal cookies and you’ll think you have sunk your teeth into a tiny blueberry pie!

Ingredients
1 cup butter, softened 2 cups brown sugar 2 eggs 2 teaspoons vanilla extract 3 cups dry oats 1 1/2 cups sorghum flour
1/2 cup tapioca flour
1 teaspoon xanthan gum 1 Tablespoon cinnamon 1 teaspoon salt 1 teaspoon baking soda 1/2 teaspoon baking powder 1 cup slivered almonds 2 cups fresh or frozen blueberries
Directions
Preheat oven to 350° F. Cream together butter and brown sugar.
Add eggs and vanilla.
Sift together flours, xanthan gum, cinnamon, salt, baking soda & baking powder.
Beat into butter / sugar mixture. Beat in oatmeal. Fold in almonds.
Roll dough between your hands to make a balls the size of a walnut. Place onto cookie sheet and press slightly. Top each cookie with 3 or 4 blueberries.
Bake for approximately 7-8 minutes or until golden brown on edges.
Eat them before anyone else sees them!
