Gluten-Free Banana Bread Biscotti

An extremely uncomplicated way to make that crispy, crunchy goodness known as biscotti! There is very little measuring or mixing involved and you can crank these out in less than an hour! As our name says, Gluten-Free Made Easy is all about making the gluten-free life EASY!

Try out this recipe for a flavor that will remind you of homemade banana bread!


1 box of Namaste Foods Quick Bread & Muffin Mix

4 eggs

1/2 cup unsalted butter, melted

1 very ripe banana, mashed thoroughly

2 teaspoons vanilla extract

1/2 cup whole walnuts


  1. Preheat oven to 350F

  2. In a large bowl beat all ingredients using an electric mixer except the walnuts.

  3. Carefully fold in the walnuts.

  4. Scrape the batter onto a parchment lined baking sheet, and form into a loaf shape. Smooth the edges and top.

  5. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean and the edges are a golden brown. Cool for 15 minutes.

  6. Slice into 1" thick slices and return to baking sheet, slice down. Bake on each side for 12-15 minutes, until crispy and dry. Cool completely before serving.
