Gluten-Free Almond Cookies

28 ounces almond paste (about 3.5 packages)

2 cups turbinado sugar

1 teaspoon sea salt

4 egg whites

2-3 cups sliced almonds

Powdered sugar


Preheat oven to 350 degrees.

Put all ingredients into a large bowl and using gloved hands, combine very well (squishing it all very well between your fingers)

Spread out the almonds on a plate and roll 1-inch balls in the almond slices to coat. If your hands get sticky, rinse them with a little water, keeping your hands a little damp, but not dripping.

Arrange cookies on cookie sheets lined with parchment paper approximately 1" apart.

Bake in preheated oven 16-17 minutes minutes or until light golden on top and just browned on the bottom. Remove from oven and cool completely, then sprinkle with powdered sugar.
