Garden Lites - MUFFINS GALORE!

A few weeks back I wrote a review about Garden Lites Superfood Veggie Cakes. Those tasty little quiche-like creations really hit the spot and were a big hit with my teenage son and his friend!

According to the CDC, Americans are not eating enough fruits and vegetables!!! As is the mission of Garden Lites - to get America to eat more veggies, you'll have no trouble convincing your picky eaters to give these a go!

But - it's time to talk about a subject that most people can agree on. MUFFINS ARE DELICIOUS! They can be pretty tricky in terms of healthiness, especially muffins that are not homemade. They are often laden with scary ingredients that you can barely pronounce. But I have good news for you! And even better news for the busy people of the world: Garden Lites makes muffins that are not only delicious and EASY. But they are just packed full of veggies! Just look at the ingredient list here:

Did you know? The name is first found in print in 1703, spelled moofin; it is of uncertain origin but possibly derived from the Low German Muffen, the plural of Muffe meaning a small cake, or possibly with some connection to the Old French moufflet meaning soft as said of bread. (from Wikepedia)

Today I tried three of types of muffins: Blueberry Oat, Banana Chocolate Chip and Double Chocolate.

Blueberry Oat: These little guys have a delicious and natural blueberry flavor. They are clean tasting and didn't feel like they weighed me down. I recommend warming these up slightly before enjoying with your morning coffee or tea! I even gave a little taste to my little dog Timmy. He kept following me around, asking for more!

Banana Chocolate Chip: Ohhh..this reminded me SO much of the banana bread that I was pretty much raised on. I remember chilly mornings in the Pacific Northwest when I would be waiting at the school bus stop, eating banana bread for breakfast when we were running late. This was an absolute staple in my household! So, to be able to have that nostalgic flavor without the work of it really made my day!

Double Chocolate: Oh. My. Goodness. This cannot even be a muffin. This is ridiculously sinful for a breakfast food. Where are the vegetables in this? Because I don't see any sign of them! All I taste is chocolate, chocolate and chocolate!

If you are busy, if you are hungry, if you want to try something new, if you simple can't or do not want to bake, try these muffins! You'll thank me!
