
Ingredients:
4 carrots, peeled and grated
2 parsnips, peeled and grated
8 medium radishes, quartered and sliced thin
1 medium fennel root, thinly sliced
1/2 medium onion, thinly sliced
1 small clove garlic, finely chopped
1 cup chopped fresh curly parsley
1/4 cup minced fresh dill
1/2 cup mayonnaise ( I use Just Mayo, which is vegan)
juice from 1/2 lemon
salt and pepper to taste
Directions:
Simply combine all ingredients except the mayonnaise. Add mayonnaise right before serving. Goes well with chicken and fish dishes!
