Gluten-Free Cheese Snack Crackers

These little bites of cheesy heaven are perfect for party finger food, school lunches or Netflix and chill.


It is truly a terrifically easy recipe - the hardest part is trying not to eat them as they come out of the oven! I dare you to put them in your gluten-free tomato soup!


Ingredients

Directions

  1. In a large bowl, sift together the flours and xanthan gum.

  2. Mix shredded cheese into flour mixture. Using a pastry cutter, cut butter into the flour mixture.

  3. Add cold water 1 tablespoon at a time until dough starts to come together. Form into a disc and wrap in plastic wrap. Refrigerate for 2 hours or overnight.

  4. Preheat oven to 375F. Line 2 baking sheets with parchment paper

  5. On a piece of parchment paper, roll out dough to 1/8" thickness. Cut into 1" square pieces and transfer to baking sheets.

  6. Spray or sprinkle crackers with a tiny with of water and sprinkle a little bit of salt.

  7. Bake for 12-14 minutes. Cool on a wire grid.
