These little bites of cheesy heaven are perfect for party finger food, school lunches or Netflix and chill.
It is truly a terrifically easy recipe - the hardest part is trying not to eat them as they come out of the oven! I dare you to put them in your gluten-free tomato soup!


Ingredients
1/2 cup Namaste Foods millet flour
1/4 cup Namaste Foods brown rice flour
1/4 cup Namaste Foods tapioca flour
1 teaspoon xanthan gum
2 cups finely shredded sharp cheddar cheese
1/2 cup of COLD unsalted butter - cut into small pieces
2.5 tablespoons cold water
salt for sprinkling
Directions
In a large bowl, sift together the flours and xanthan gum.
Mix shredded cheese into flour mixture. Using a pastry cutter, cut butter into the flour mixture.
Add cold water 1 tablespoon at a time until dough starts to come together. Form into a disc and wrap in plastic wrap. Refrigerate for 2 hours or overnight.
Preheat oven to 375F. Line 2 baking sheets with parchment paper
On a piece of parchment paper, roll out dough to 1/8" thickness. Cut into 1" square pieces and transfer to baking sheets.
Spray or sprinkle crackers with a tiny with of water and sprinkle a little bit of salt.
Bake for 12-14 minutes. Cool on a wire grid.
